
Pre-heat smoker to 225 degrees
Place thawed turkey with neck and giblets removed in an aluminum turkey pan. Fold wings under bird. Insert quartered onion, lemon, orange, apple into the cavity.
Coat the exterior of the bird with canola oil and season with rub. Cover all sides and under skin.
Smoke at 225 degrees for 30 minutes per pound. Add 30 minutes for just incase.
Allow turkey to rest for 15 minutes before slicing and serving.
